Description
Volnay is situated upon the highest hill of Côte de Beaune and the .97ha parcel of which the fruit for this bottling hails is located on the north end, adjacent from the historically celebrated Pommard. Tucked between two hills which protect the grapes from the cold winds that occur, this site has little issue achieving full ripeness. After the grapes are manually harvested they undergo cool maceration and native yeast fermentation in temperature-controlled stainless steel. The grapes see 100% malolactic fermentation before aging on their fine lees in French oak barrels, of which 20% is new. The wine is bottled without fining and only light filtration.
Aromatically the wine has notes of red and black fruits such as cherries and cassis, as well as a hint of freshly rained upon top soil. The palate has bright acidity and chewy tannins, with fresh red fruit flavors at the core.
