From the Winery: "At Hamby Cellars, we focus on using low-intervention winemaking techniques to showcase the varietal and thoughtfully craft balanced wines. This means using all native yeast fermentation and meticulously monitoring all aspects of the wine throughout its cycle from berry to bottle. These wines are meant to highlight their origins and elicit a sense of place.
We age the wines in all French oak barrels with low to no amount of new oak, allowing these handcrafted wines to bring out the truest expression of the grapes, soil, and overall terroir.
Nestled in the heart of the Peteluma Gap, Noble Family Vineyard’s proximity to the Pacific Ocean’s maritime winds and rolling fog creates a cool climate that produces smaller berries and clusters on the vine. The vineyard’s ideal location results in thicker-skinned grapes that develop full ripeness, complex structure, and intense flavors. The longer ripening season forges a wine with mature silky tannins, balanced acidity, as well as ageability. Utilizing 10% whole cluster fermentation lends to lifted floral and tea leaf aromatics, while tastes of cherry and forest floor expand on the palate ending in a long, but delicate finish."
